Needed to switch up my breakfast routine…shredded zucchini, carrots, eggs, seasonings, fried in coconut oil. They turned out great!! TIP: wrap shredded zucchini in paper towels or a tea towel and SQUEEZE all the water out before mixing with eggs 🙂 Add a protein such as: Paleo bacon or chicken sausage, a few berries and VOILA!
